They are winter-deciduous and come back each year with lovely rounded leaves, which are often purple when they sprout. Their flowers are produced throughout summer and they are nicknamed "The Orchid of the Mediterranean", because of their astonishing beauty. The edible capers are simply flower buds (but also the fruits), which are gathered and preserved in salt or vinegar. This spineless, tidy, selection of Capparis spinosa was originally found on the small volcanic island of Salina, which is located off the coast of Sicily and it is preferred above others.
