Pitahaya or Dragon Fruit is a climbing cactus with excellent fruits, native to the American continent. This fruit has been used since ancient times before the Spanish colonization by American natives. Known as "pitahaya" in the Antilles where the Spanish first saw it and spread it to other regions. Climbing stems are green, with 2 - 4 ribs with slightly undulating spiny margins. They produce huge nocturnal flowers. Then they bear fruits, with the skin varying from pink to red, according to the species or cultivar. Fruits are appreciated by their refreshing properties and some are very sweet.
