Canistel or Yellow Sapote is a sweet tasting large fruit, from an evergreen tropical tree native to Central America, cultivated and selected by pre-Columbian civilizations.

Pouteria campechiana is an erect tree growing about 8m (25 ft) talland sometimes taller. Leaves are evergreen, thin and glossy. Yellow Sapote has cream coloured fragrant flowers. The fruit, named Canistel, is very variable in form and size, round or ovoid, with or without a pointed tip. Pouteria campechiana fruits are yellow, smooth and glossy. The flesh is sweel, yellow and very dense. Each fruit has 1-4 large brown seeds. They ripen in summer and autumn.

Yellow Sapote is easy to grow. It lives in many types of soils, including sand or limestone. It is wind resistant. Canistel is rich in vitamin C, calcium, phosphorous and is low in fats, despite its pleasant fatty texture.
