Sauces Mojos & Spices

The Canary Islands are home to a number of sauces and spices used to flavour local dishes. Many will know the “mojo” sauces that are used over the seven islands. Green Mojo is based on coriander and it is often used with fish and seafood, while Red Mojo is flavoured by sweet peppers and is mostly used on meat. Both can be combined with potatoes, or grilled cheese. There are many local varieties from the different islands, with almonds, garlic and other flavours. Most are not spicy. Spicy red mojos are called Mojo Picón.
